  • 3 boneless skinless chicken breasts (about 1 ½ pounds)
  • 5 tablespoons unsalted butter
  • 1 medium shallot, diced
  • 1 teaspoon minced garlic
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • ½ cup half-and-half
  • 1 package (16 ounces) potato gnocchi
  • 2 cups fresh baby spinach
  • ½ cup finely grated Asiago cheese
  • Fresh parsley for garnish

Instructions

  1. Season and cook chicken: Pat chicken breasts dry, season with salt and pepper, cook in melted butter over medium heat for about 8-10 minutes until cooked through. Set aside.
