  • 23 teaspoons Cajun seasoning
  • 1 tablespoon avocado oil
  • 8 tablespoons unsalted butter
  • ½ cup all-purpose flour
  • 1 large onion
  • 1 green bell pepper
  • 1 red bell pepper
  • 2 stalks celery
  • 6 cloves garlic
  • 3 cups chicken broth
  • Cooked white rice

Instructions

  1. Prepare by chopping the onion, bell peppers, celery, green onions, and parsley. Mince the garlic. Season chicken with Cajun seasoning.
  2. Heat avocado oil in a large skillet over medium-high heat and sear the chicken until browned; set aside.
  3. Lower heat to medium and melt butter in the same skillet. Whisk in flour to create a roux, cooking until medium brown.
