  • 340 g Brussels sprouts, halved
  • 225 g bow tie pasta
  • 340 g cooked turkey sausage
  • 5 cloves garlic, minced
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • Salt and pepper to taste
  • ¼ teaspoon smoked paprika
  • Fresh thyme leaves

Instructions

  1. Preheat oven to 200°C. Toss butternut squash with 1 tablespoon olive oil, salt, and pepper; roast on a lined baking sheet for 20 minutes until caramelized.
  2. Meanwhile, prepare Brussels sprouts by tossing them with 2 tablespoons olive oil, salt, and pepper; roast for another 20-30 minutes until golden.
  3. Cook bow tie pasta in salted boiling water according to package instructions; reserve some pasta water before draining.
  4. In a skillet over medium heat, sauté sliced turkey sausage in 1 tablespoon olive oil until browned. Remove from skillet.
  5. In the same skillet, sauté minced garlic in butter until fragrant. Add drained pasta and stir well.
  6. Fold in roasted butternut squash, Brussels sprouts, turkey sausage slices, and fresh thyme; adjust seasoning as needed.
