- 3 tablespoons olive oil
- Juice of 1 lemon
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 2 teaspoons paprika
- 1 teaspoon turmeric
- 1 teaspoon cinnamon
- 1 teaspoon garlic powder
- ½ teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- 2 cups cooked rice (or quinoa/cauliflower rice)
- 1 cucumber (diced)
- 1 cup cherry tomatoes (halved)
- 1 red onion (thinly sliced)
- 1 bell pepper (diced)
- 2 cups lettuce or mixed greens
- ¼ cup fresh parsley or mint (chopped)
- ¼ cup tahini
- 2 tablespoons lemon juice
- 1 clove garlic (minced)
- Water to thin (as needed)
- Salt to taste
- In a bowl, mix olive oil, lemon juice, spices, salt, and pepper. Marinate chicken for at least 1 hour.
- Cook marinated chicken in a skillet over medium-high heat for 5-7 minutes per side until golden brown. Rest before slicing.
