  • 1/2 cup unsalted butter (room temperature)
  • 3/4 cup granulated sugar

  • 1 teaspoon vanilla extract
  • 1/2 teaspoon coconut extract
  • 2/3 cup coconut milk (well mixed)
  • For frosting: 3/4 cup unsalted butter
  • 1.5 tablespoons lime zest
  • 3.54.5 cups powdered sugar (sifted)
  • 2 tablespoons lime juice (freshly squeezed)
  • 1 tablespoon whipping cream (if needed)
  • 23 drops green food coloring (optional)

Instructions

  1. Preheat the oven to 350°F and line a muffin pan with paper liners.
  2. In a blender, finely process the shredded coconut.
  3. Whisk together flour, processed coconut, baking powder, and salt in a bowl.
  4. Beat butter and sugar until fluffy; mix in eggs, vanilla extract, and coconut extract.
  5. Gradually add dry ingredients and coconut milk to the mixture.
  6. Fill muffin cups two-thirds full and bake for 15–17 minutes until a toothpick comes out clean.
  7. For frosting, beat softened butter and gradually add lime zest and powdered sugar; mix in lime juice.
  8. Once cooled, frost cupcakes and top with toasted coconut if desired.
