  • 250g / 9oz full fat Cream Cheese
  • 150g / 5.3oz Dried Cranberries (roughly diced)
  • 125g / 4.4oz Pecans (roughly diced)
  • 100g / 3.5oz Mature/Sharp Cheddar Cheese (grated)
  • 1/4 cup / 4 tbsp finely diced Chives

Instructions

  1. In a small bowl, mix diced pecans, cranberries, and chives.
  2. In a large bowl, blend room temperature cream cheese and grated cheddar until smooth. Fold in half of the pecan mixture.
  3. Shape the cheese mixture into a log using cling film. Refrigerate for at least 1 hour to firm up.
  4. Roll the chilled log in the remaining pecan mixture until fully coated.
  5. Serve on a platter with assorted crackers and enjoy!
