  • 4 tbsp unsalted butter, melted
  • 24 squares graham crackers
  • ¼ cup sugar
  • 2 egg yolks
  • 1 can (12oz) sweetened condensed milk
  • ½ cup fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Butter and line an 8-inch square baking pan with parchment paper.
  3. In a food processor, combine graham crackers, sugar, and melted butter; pulse until crumbled. Press mixture into the bottom of the prepared pan.
  4. Bake the crust for 10-12 minutes until lightly browned; allow to cool.
  5. In a bowl, whisk together sweetened condensed milk and egg yolks until smooth. Stir in fresh lemon juice.
  6. Pour filling over cooled crust and bake for another 15-20 minutes until set.
  7. Cool completely in the pan on a cooling rack; refrigerate for at least an hour before serving.
  8. Lift out using parchment paper edges, slice, and enjoy!
