Ingredients

  • Lump crab meat
  • Mayonnaise (or Greek yogurt)
  • Dijon mustard
  • Fruit juice or broth instead of Worcestershire sauce
  • Egg (beaten)
  • Breadcrumbs
  • Green onions
  • Red bell pepper
  • Lemon juice
  • Old Bay seasoning
  • Salt and pepper
  • Egg roll wrappers
  • Vegetable oil

Instructions

  1. Prepare the filling by mixing lump crab meat, mayonnaise, Dijon mustard, fruit juice or broth, beaten egg, breadcrumbs, green onions, red bell pepper, lemon juice, Old Bay seasoning, salt, and pepper in a bowl.
  2. Assemble the egg rolls by placing about two tablespoons of filling on an egg roll wrapper. Moisten edges with water and fold into triangles.
  3. Heat vegetable oil in a deep skillet to 350°F (175°C).
  4. Fry the egg rolls in batches for 3-4 minutes per side until golden brown.
