  • 400 g dried figs
  • 1 cup water
  • 40 g granulated sugar
  • 3 tbsp fresh lemon juice
  • 170 g cream cheese
  • 1 tsp vanilla extract
  • 1 large egg
  • 40 g sugar

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix flour, brown sugar, and salt. Cut in cold butter until crumbly.
  2. Press the mixture into a lined baking pan and bake for 15 minutes until golden.
  3. Soak dried figs in water for 10 minutes until softened, then blend with sugar, lemon juice, cream cheese, vanilla extract, and egg until smooth.
  4. Spread the fig mixture over the baked crust and return to the oven for 30 minutes until set.
  5. Allow to cool completely before slicing into squares.
