  • 3 tbsp salted butter
  • 1 cup brown mushrooms
  • 3 shallots
  • 2 medium stalks celery
  • 3 cloves garlic
  • Fresh sage and parsley
  • 1/4 cup all-purpose flour
  • 1/2 cup white grape juice
  • 2 cups chicken stock
  • 1 lb baby yellow potatoes

Instructions

  1. Preheat oven to 325°F (163°C). Pat chicken dry and season with salt and pepper.
  2. In a dutch oven, melt butter over medium-high heat. Brown the chicken for about 5 minutes on each side, then remove from pot.
  3. Sauté mushrooms, shallots, celery, and garlic until softened. Stir in sage, parsley, and seasonings.
  4. Sprinkle flour over vegetables; add white grape juice and chicken stock gradually while stirring until thickened.
  5. Add baby potatoes, then nestle browned chicken pieces on top.
  6. Roast in the oven for 40-45 minutes until the internal temperature reaches 165°F (74°C). Let rest before serving.
