  • 3 medium apples, peeled and diced
  • ⅓ cup brown sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • ¾ cup all-purpose flour
  • ½ cup brown sugar
  • ½ teaspoon cinnamon
  • ½ cup cold unsalted butter, cubed

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press firmly into the bottom of a springform pan.
  2. Beat softened cream cheese until smooth; mix in sugar and vanilla. Add eggs one at a time, followed by sour cream until blended.
  3. Toss diced apples with brown sugar, cinnamon, cornstarch, water, and lemon juice. Layer half the cheesecake batter over the crust, add seasoned apples, then pour remaining batter on top.
  4. For the crumble topping, mix flour, brown sugar, cinnamon, and cubed butter until crumbly. Sprinkle over the cheesecake filling.
  5. Bake for about 65 minutes until set around edges but slightly wobbly in center. Allow cooling gradually in the oven for an hour before refrigerating for at least four hours.
