  • 12 ounces 60% cocoa chocolate bars (finely chopped)
  • 1 and 3/4 cups heavy cream
  • 2 teaspoons vanilla extract
  • 2 teaspoons espresso powder
  • 1/4 teaspoon fine sea salt
  • 1/2 cup unsalted butter (for whipped topping)
  • 2 cups heavy cream (for whipped topping)
  • 1/4 cup confectioners' sugar

Instructions

  1. Prepare the cookie crust by crushing the Oreo cookies into fine crumbs and mixing them with melted butter. Press firmly into the bottom of a pie pan.
  2. Melt the finely chopped chocolate in the microwave until smooth.
  3. In another bowl, whip together heavy cream, vanilla extract, espresso powder, and sea salt until soft peaks form. Gently fold this mixture into the melted chocolate until fully combined.
  4. Pour the chocolate filling into the prepared crust and smooth out the top. Cover with plastic wrap and chill in the fridge for at least four hours.
  5. For the whipped topping, beat cold heavy cream with room-temperature butter until soft peaks form. Gradually add sifted confectioners' sugar.
