6 large eggs
1/4 cup mayonnaise
1 teaspoon yellow mustard
1/4 teaspoon salt
1/8 teaspoon black pepper
1/2 teaspoon paprika (plus more for dusting)
A tiny dash of orange food coloring (optional)
2 tablespoons fresh chives (finely chopped)
Instructions
Boil eggs: Place eggs in a saucepan, cover with cold water, and bring to a boil. Remove from heat and let sit covered for 10 minutes.
Ice bath: Transfer eggs to an ice bath to cool completely for at least 5 minutes.
Peel eggs: Tap each egg to crack the shell, then peel under running water.
Prepare filling: Halve the eggs and scoop out yolks into a bowl. Mix yolks with mayonnaise, mustard, salt, pepper, paprika, and food coloring until smooth.
Pipe filling: Spoon yolk mixture into a piping bag and fill each egg white half.
