Ingredients

Scale
  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 teaspoon yellow mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 teaspoon paprika (plus more for dusting)
  • A tiny dash of orange food coloring (optional)
  • 2 tablespoons fresh chives (finely chopped)

Instructions

  1. Boil eggs: Place eggs in a saucepan, cover with cold water, and bring to a boil. Remove from heat and let sit covered for 10 minutes.
  2. Ice bath: Transfer eggs to an ice bath to cool completely for at least 5 minutes.
  3. Peel eggs: Tap each egg to crack the shell, then peel under running water.
  4. Prepare filling: Halve the eggs and scoop out yolks into a bowl. Mix yolks with mayonnaise, mustard, salt, pepper, paprika, and food coloring until smooth.
  5. Pipe filling: Spoon yolk mixture into a piping bag and fill each egg white half.
  6. Create ridges: Use a knife or toothpick to create pumpkin-like indentations on the filling.
  7. Garnish: Insert chive pieces as stems and dust with paprika before chilling until ready to serve.
