  • 8 slices of sourdough bread
  • 1 pound of thinly sliced roast beef
  • 8 slices of sharp cheddar cheese
  • 4 tablespoons of unsalted butter
  • 1 tablespoon of Dijon mustard (optional)
  • Salt and pepper to taste
  • Fresh arugula or spinach (optional, for garnish)

Instructions

  1. Preheat a large non-stick skillet over medium heat.
  2. Spread butter on one side of each slice of bread.
  3. Place one slice, butter-side down, in the skillet. Optionally spread Dijon mustard on the unbuttered side.
  4. Layer with roast beef and two slices of cheese.
  5. Top with another slice of bread, butter-side up.
  6. Cook for 3-5 minutes until golden brown; flip and cook for another 3-5 minutes until crispy and cheese is melted.
  7. Remove from skillet, cool slightly, then cut and serve.
