  • 89 medium starchy potatoes (about 1.2kg), thinly sliced
  • 1 head garlic
  • 1 cup (250 ml) heavy cream
  • 1/4 cup (60 ml) whole milk
  • 1 tablespoon unsalted butter
  • 1 teaspoon fresh thyme leaves
  • 1/4 teaspoon nutmeg
  • 2 cups (about 220g) shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste
  • Fresh chives for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Roast the garlic wrapped in foil with olive oil for about 30 minutes until soft.
  2. Grease a 9×13-inch baking dish with butter.
  3. Thinly slice the potatoes and layer them upright in the dish.
  4. In a saucepan, combine heavy cream, whole milk, butter, half of the cheese, thyme, nutmeg, salt, and pepper over medium heat until melted.
  5. Squeeze roasted garlic into a paste and stir it into the cream mixture.
  6. Pour the creamy mixture over the layered potatoes; cover tightly with foil.
  7. Bake for about 40 minutes; remove foil and sprinkle remaining cheese on top.
  8. Bake uncovered for an additional 30 minutes until bubbling and golden brown.
  9. Let rest for a few minutes before serving; garnish with fresh chives.
