  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 and 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice
  • 1/8 tsp ground cloves
  • 4 large apples, peeled and diced
  • 1/4 cup salted butter, cubed
  • 2 tbsp apple cider (or 1 tsp lemon juice if you don't have cider)
  • 1/2 cup brown sugar, packed
  • 1 and 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1 cup granulated sugar
  • 6 tbsp salted butter, cubed
  • 1/2 cup + 1 tbsp heavy cream
  • A pinch of flaky sea salt
  • 1/2 cup granulated sugar
  • 2 and 3/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp allspice
  • 1/8 tsp ground cloves
  • 1/4 cup salted butter, melted
  • 1/4 cup light brown sugar, packed
  • 1 and 1/2 tbsp granulated sugar
  • 1/2 cup + 1 tbsp all-purpose flour
  • A pinch of salt

Instructions

  1. Preheat your oven to 365°F (185°C) and prepare baking sheets with parchment paper.
  2. Cream softened butter with granulated and brown sugars until fluffy. Beat in eggs and vanilla.
  3. Gradually mix in flour, baking soda, baking powder, salt, cinnamon, nutmeg, allspice, and cloves until combined.
  4. Chill dough for at least 30 minutes.
  5. Cook diced apples with butter, lemon juice (or cider), brown sugar, cinnamon, nutmeg, and cloves over medium heat until tender.
  6. Prepare salted caramel sauce by cooking sugar until melted; stir in butter and cream until smooth.
  7. Scoop chilled dough onto baking sheets; bake for 10-12 minutes until edges are set.
  8. Once cooled slightly, fill each cookie with apple filling, sprinkle crumble topping, and drizzle with caramel.
