  • 8 oz fettuccine or penne pasta
  • 1 medium butternut squash, peeled and diced
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1/2 cup coconut cream or non-dairy cream
  • 1 teaspoon dried sage (or 1 tablespoon fresh sage)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Spread diced butternut squash on a baking sheet, drizzle with olive oil, and roast for 25-30 minutes until tender.
  2. Boil salted water in a large pot and cook pasta according to package instructions. Reserve half a cup of pasta water before draining.
  3. In a skillet, heat olive oil over medium heat. Sauté onions for about 5 minutes until translucent, then add garlic and cook for an additional minute.
  4. Add roasted butternut squash, vegetable broth, and sage to the skillet. Simmer for 5 minutes.
  5. Blend the mixture until smooth, return to low heat, stir in coconut cream, and season with salt and pepper.
  6. Toss cooked pasta into the sauce, adding reserved pasta water as needed for desired consistency.
