  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 cup cream
  • 1 cup vegetable stock or water
  • 2 cups baby spinach, washed
  • 1 cup marinated artichokes, drained and chopped
  • 1/4 cup basil pesto
  • 1 cup gouda cheese, grated

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large pan over medium heat, heat the olive oil. Add the chopped onion and sauté until translucent (about 5 minutes).
  3. Stir in minced garlic, oregano, and basil; cook for an additional minute until fragrant.
