  • 3 large chicken breasts (sliced into strips)
  • 2 cups uncooked rice
  • 1/2 cup soy sauce
  • 1/2 cup honey
  • 2 tbsp olive oil
  • 2 small heads broccoli (chopped)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp oregano
  • 3 cloves garlic (minced)
  • 2 tbsp sriracha
  • 2 tsp sesame oil
  • 1 tsp ground ginger
  • 2 tsp arrowroot powder mixed with 2 tbsp water to make a slurry (sub cornstarch)
  • 1/2 cup mayo
  • 23 tbsp water (to thin the spicy mayo)
  • Sesame seeds for topping

Instructions

  1. Cook rice according to package instructions; set aside.
  2. Chop broccoli into small florets and steam or sauté until tender.
  3. Season chicken strips with salt, pepper, chili powder, paprika, onion powder, and oregano; cook in olive oil until golden brown.
  4. Whisk sticky sauce ingredients together and pour over cooked chicken; simmer until thickened.
  5. Make spicy mayo by mixing mayo with sriracha and water until pourable.
  6. Assemble bowls: start with rice, add chicken, broccoli, drizzle with spicy mayo, and top with sesame seeds.
