Ingredients

  • 2 x 5oz cans of tuna, drained
  • 1 medium onion, chopped
  • 1/2 stalk of celery, chopped
  • 1 clove of garlic, minced
  • 1 tablespoon of parsley, chopped
  • 34 tablespoons of mayonnaise
  • 3 tablespoons of extra virgin olive oil (divided)
  • 1/3 cup shredded mozzarella cheese
  • Sliced bread (your choice)
  • Softened butter
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine drained tuna with onion, celery, garlic, parsley, mayonnaise, olive oil, and mozzarella. Stir until well mixed and season with salt and pepper.
  2. Heat a non-stick skillet over medium heat and add 1 tablespoon olive oil.
  3. Butter one side of a slice of bread and place it butter-side down in the skillet. Top with about 2 tablespoons of tuna salad.
  4. Butter another slice of bread on one side and place it on top of the tuna salad (buttered side facing up).
  5. Cook until the bottom slice is golden brown; flip gently to toast the other side until golden and cheese is melted.
